DIY Coconut Butter

Have you ever made coconut butter? Wait, have you ever heard of coconut butter? I hadn’t, until a few months ago. It’s creamy, delicious, smooth… makes a great spread on fruit, addition to recipes, or just as a snack with a spoon!

The recipe? Couldn’t be more easy. Coconut + blender (or food processor)

Add unsweetened flaked coconut to your machine.

Turn it on high. You will have to stop to scrape down the sides several times during this process.

Beat the heck out of it. It should take 5-10 minutes.

I ended up switching from the Ninja (I hate that thing. I have since returned it to Costco!) and put it in my old cuisinart mini food processor. It works well, but it’s super small and very very loud! I still can’t find the S blade for my Kitchen Aid processor or I would have used that.

Blend it up, and you’ll soon have a beautiful paste. It will be warm and a bit viscous at first. It will harden as it comes back to room temperature. I also added a spoon of coconut oil in to help with the texture during my Ninja Fail.

One medium sized bag of coconut flakes made three small jars of coconut butter.
