A Sunday Morning Cookup

Yep, I’ve been a blogging slacker. It’s been the last thing on my mind, to tell you the truth. The Foodie Family is going through some really heavy stuff (and no, I’m not pregnant… HA). But some pretty serious life changing, emotionally, mentally and physically draining stuff. And it’s piling up on me. There has been garbage food consumed. Pizza and chips anyone? I feel disgusting. And for meals, I’ve been cooking to live, instead of for fun. Out of habit, I did take a few photos. I’m too exhausted to type out some witty commentary or walk you through the recipes step by step, but here are some photos of what I’ve cooked in the past week and a bit.

Sunday morning I procrasticooked. I made:

Green chicken marinade (it’s hanging out in the fridge to be roasted tomorrow) from Nom Nom Paleo

Super porktastic meatloaf from the Nom Nom paleo ipad app. This was awesome. I got distracted by the phone while I was broiling the bacon on top so the edges got burnt. Grr. I used my mini loaf pan for these. I’ll post the full recipe later. I made lots of improvisations.

Bacon and roasted garlic aioli! OMG GOOD. I used my mayo recipe and added in some crispy bacon bits and a drizzle of bacon grease.

Also added in some roasted garlic that I made for the velvety butternut squash (which I actually used sweet potatoes for this time.. and forgot to take a pic!)

Homemade cherry pie Larabars!

Coriander and mint chutney. I wasn’t thinking and put some oil in it, the consistency is off, but the taste is good.

I also made some hard boiled eggs but they were quite honestly the ugliest boiled eggs I’ve seen in a long time. Not picture worthy. And my handy dandy little boiled egg timer doo dad that sits in the pot broke. Come ON! Not my day!

Last week, a few things I made were:

Spicy Tuna Cakes from Nom Nom Paleo (recipe is in the ipad app, buy it!)

Pulled pork in the crockpot. No after pics, because Mr. Foodie and I tasted it and gobbled it up all that same day for every meal. Ha! Man, this was good. Too good. Probably because I used a ridiculously expensive whey fed locally raised pork shoulder. Not in the budget anymore, sadly! Meh.

Roasted potatoes. I just used oil and ranch seasoning

Some pretty beets. They looked less pretty after they were roasted, but so pretty while raw!

Roasted sunchokes. Can’t say that I’m a fan. I read online that they can cause digestive distress and I think that was definitely the case for us. Eeep.

That’s all I’ve got. Please don’t stop reading my blog because I’ve been slacking lately! If only this paid the bills and was eligible for credit in my master’s program, we’d be in good shape!

Recipe Round Up: April 24, 2012

I may be reasonably creative in the kitchen, but I definitely can’t come up with, photograph, and blog about new recipes every single day! I’ve long been emailing recipes to friends and colleagues, or sharing them on Facebook. Thought I would share a few of my favourites to keep you going through the week! These are all gluten-free and grain-free, of course! Who knows, maybe I will make this a regular feature?

Drip Beef from Pioneer Woman

Growing up, we always called this recipe beef dip, and we made it with garlic, soy sauce and some other stuff in the crockpot. Salty, shredded beef piled high onto a hot dog bun and dipped in the sauce. Then, I later found out it was called French Dip. Last year, I discovered Pioneer Woman’s Drip Beef. With pepperoncinis. I love pepperoncinis. I had to try it and it was love at first bite. PW’s post here has two variations of this recipe, but I’ve honestly never tried the second one because the first is so delicious.  You could serve it on regular bread if you are into that, or perhaps on a grain-free roll? I just eat it out of a bowl with a fork (that is, if I don’t fill myself eating it right out of the pot…) I make mine in a slow cooker.

Kale and sausage mock lasagna, from Kalyn’s Kitchen

This recipe sounded bizarre to me the first time I read it, but Kalyn’s recipes rarely let me down.  It is very easy to put together and it uses two of my favourite ingredients – sausage and kale! How could I go wrong? The last time I made this I put in a layer of drained cottage cheese. This recipe tastes even better the next day, so make it the night before and pack slices for lunch.

Weekend Glow Kale Salad, from Oh She Glows

A vegan recipe on a paleo-ish blog? I know, right? But this one is a winner. Once, my office had an evacuation and we couldn’t go back into the building for the day. I mourned the loss of my delicious salad waiting for me on my desk and nearly teared up when I threw it in the trash the next day. Truth be told, this recipe is even better with some grilled chicken or tuna tossed into it…vegan shmegan ;) . The sesame-tahini dressing is really tasty as well! Do not be impatient, let the dressing marinate as she says. It will be worth the wait!
